No-Bake Pumpkin Pie CharlotteIt’s officially November 1st and so we all need to start thinking about Thanksgiving. I’m not saying to plan everything out to a T already, but at least let’s have it in our peripheral. We don’t want to get caught off guard at the last minute and have to scramble for ideas in the final hour. It’s also officially the last pumpkin post in our pumpkin marathon. I hope you’ve been keeping up with all of them, and I hope you’ve enjoyed the recipes. This one is a nod to the good ol’ pumpkin pie. It’s like a pumpkin pie meets cheesecake meets charlotte and the best part about it is that you don’t have to bake it. No baking involved whatsoever. That means you can free up some oven space and make this ahead of time so you don’t have a million things to do on Thanksgiving Day. If you’re looking for more traditional pumpkin pie recipes though, I might suggest this double crust version and this crème brûlée version. They’re still some of my favorites from the past!

Pumpkin Apple Coffee CakeWe’re right in the full swing of pumpkin appreciation month over on Instagram and on this blog. Things got started earlier in the week with these Mini Arroz Con Leche Pumpkin Pies. If you follow me on Instagram, then you’ll know that this is a pumpkin blog now (for just a short while). I’m sharing my favorite pumpkin treats from the past along with some new and exciting recipes over the next couple of weeks. Just in case we don’t have enough pumpkin in our lives at the moment. I’ve got you covered. Today, I’m sharing the ultimate Fall coffee cake. This Pumpkin Apple Coffee Cake is Autumn on a plate. Homemade pumpkin cake filled with spiced apples and topped with a pecan streusel, it doesn’t get any better than this in the crumb cake department. Whether you eat it for breakfast or a snack or even dessert, this is the cake of the season…or at least I’m trying my hardest to ensure it is.

Vintage Strawberry Cheese Treat

Vintage Strawberry Cheese TreatIf you follow me on Instagram (and if you don’t you really should), you’ll know that I’ve been looking for funny vintage food ads on the internet and sharing them on my IG stories for a few months now. I created a highlight for them if you want to see the archive. I love them because obviously times were so different then, but it’s really great to see how ad agencies thought back then and how they marketed certain food products to the consumers—mostly stay at home wives—and how much different ads are nowadays. In my quest for these funny out-dated ads, I came across a 1961 ad for a company called Ann Page Foods, who among many things, produced a line of jams and preserves. The ad in question (which you can see below) featured a “Bakeless Wonder” recipe that was titled simply, Strawberry Cheese Treat. I thought it would be a fun challenge to try out the recipe and share it on the blog. In the end, it was pretty a fun exercise and I got a great treat at the end, so it’s a win-win.

Roasted Strawberry Sheet Cake

Roasted Strawberry Sheet CakeSheet cakes are the best because you can either feed a crowd with them, or just have a feast all to yourself. I actually don’t recommend eating it all by yourself…at least not in one sitting. Although, it does depends on what day of the week it actually is. If it’s Friday, and work has been hectic, then maybe you do want an entire cake all to yourself? Who’s to say, really? There’s fruit in it so it’s basically healthy. All kidding aside this Roasted Strawberry Sheet Cake is the dessert I’ll be making all summer long because it’s versatile and so easy to make. Use whatever fruit is in season to bake it again and again without getting bored of it. The base is a delicious yellow cake that lends itself to any flavor you pick. Serve it with a dusting of powdered sugar, fresh whipped cream or ice cream, if you’re feeling adventurous. I really don’t cake how you make, just as long as you make it!

Peanut Butter Chocolate Doughnut CakeAbout five years ago I made and posted this recipe for Baked Peanut Butter Chocolate Doughnuts which are very near and dear to my heart for several reasons. The first obvious reason is that they’re absolutely delicious, and the second reason is that I met my husband on Instagram because of those particular doughnuts. Jules had been following me because of my blog and he commented on a photo of those doughnuts and it sparked a conversation that went on forever. We agreed to meet for a drink and the rest is history. As we approach our second wedding anniversary next week, I think it’s nice and almost necessary to reminisce about that fateful day. This Peanut Butter Chocolate Doughnut Cake is a homage to that post, and it also comes from this week’s episode of Married and Hungry!

Black Forest Tres Leches Cake

Black Forest Tres Leches CakeIf you’ve never tried a classic tres leches cake before, then I think you’re missing out big time. It’s one of my favorite desserts because it’s somewhat fancy but at the same time not fancy at all. It’s impressive enough to be the centerpiece of any occasion, yet uncomplicated enough to be made and served any day of the week. My favorite part about it is, aside from the fact that it’s a cake, is that it’s not a layered cake, so you don’t have to worry too much about decorating. The cake itself is also quite decadent because it’s a light sponge soaked in three different types of milk and then topped with lots of fresh whipped cream. This Black Forest Tres Leches Cake is a new take on two classics. If you want some more inspiration on both fronts, take a gander at this Tres Leches Ice Cream or this Black Forest Fudge. Anyway you slice it, you can’t lose.
