Cheesy Broccoli Cheddar DipThere’s no point in me saying it, because we already know, but the best part of any “game day” or watching of a sport just so happens to be the food. I’m trying to convince my husband to join a local softball league just so that I can go watch his games and bring the team snacks, and you’d better believe that they would be some great snacks at the games. If you’re gearing up to watch the upcoming super bowl, or just pretending to watch it so that you can enjoy the appetizers, perhaps you’d like to include this very Cheesy Broccoli Cheddar Dip? Did I mention bacon is involved? It would be the best centerpiece to any tailgate, game day party, or family get together. Potlucks? They don’t even stand a chance. You’d knock out the competition. Your potlucks are competitive like mine are, right? Well, if they are, you’d win with this dish. Hands down.

Caramelized Onion Beer FocacciaI get the weirdest cravings sometimes and they always hit me at the oddest hours. Normally, it’s right before bed, just after I’ve brushed my teeth and I’m already tucked in. Which I think is just a cruel joke the universe likes to play on me. It’s not like it’s possible to satisfy such a craving so late at night. These yearnings are never sweet. They always end up being savory, cheesy, and fried and bread is always involved in some way, shape or form. The other night I had an intense craving for pizza, but not your every day normal pizza with sauce and what not. This was more of a heartier pizza…like fluffy bread topped with cheese and onions. The kind of onions that are so caramelized they’re like jam. Then out of nowhere I was like, wouldn’t it be awesome if the bread was made with beer?! How delicious would that be? Then I told myself to go to sleep because hello, it was like 11:30PM and I had to wake up early to work and take care of my nephew. The craving eventually went away, but we now have this Caramelized Onion Beer Focaccia to show for it. Apparently dreams do come true.

Buttermilk Chicken Fried Potatoes

Buttermilk Chicken Fried PotatoesWith New Year’s Eve right around the corner, I figured we’d all be on the lookout for appetizer recipes that are just as simple as they are delicious. A no fuss no muss type of starter without all the frills and fancy ingredients that some over-the-top recipes have. These Buttermilk Chicken Fried Potatoes are made in the same way fried chicken or chicken fried steak is prepared, which just so happens to take potatoes to the next level. They remind me of my childhood because my sisters’ and I loved going to this pizza, fried chicken and potato place when we were young, and if  you’re in SoCal, then you might know just the place I’m talking about. It reminds with Blakey’s and is quite delicious. This year, let’s forget about those fancy appetizers, and let’s go back to the simple comfort classics that we all know and love. I hope you give them a try and I hope you all have a safe and very fun New Year’s Eve!

Baked Brie and Bread WreathThe holidays are in full swing and that means we really need to start thinking about our entertaining menus. 9 times out of 10 I wait until the last minute to plan things out, and then I’m left scrambling around trying to get my life in order like a chicken with it’s head cut off. It’s not a pretty sight. This year however, I’ve decided to take initiative and de-stress my holiday gatherings, so to speak. I’m getting a head start by sharing this beautiful holiday recipe for a show-stopping Baked Brie and Bread Wreath. Not only does it act as a delicious appetizer, but it can also double as an awesome centerpiece for any holiday party. I don’t know about you, but an edible centerpiece is just the kind of thing we need more of because they kill two birds with one stone. (Sorry for all the gruesome bird metaphors). I guarantee you 100% that if you place this on your table, everyone will be blown away and you’ll be the talk of the town. If you’re not ready for all that fame, perhaps don’t give this recipe a try. I’m kidding, you most definitely should give it a try because it’s ridiculously delicious!

Potato and Chorizo Quesadillas

Potato and Chorizo QuesadillasI love a good quesadilla—but if I’m really being honest, I love a bad one as well—because they’re 100% versatile and perfect for any occasion. They can be transformed into a snack, from an appetizer to a full on meal and whipped up without much effort at all. I can’t tell you how many times I’ve gone to a Mexican restaurant and ordered a steak quesadilla for dinner (with a side of rice and beans because I’m no animal). Normally they’re made with flour tortillas and typically that’s how I prefer them, but have you ever experienced them with corn tortillas? They’re just as delicious, especially when filled with chorizo and potatoes, and fried in a bit of oil to give them a somewhat crunchy exterior.  These Potato and Chorizo Quesadillas are the perfect snack, appetizer or light lunch/dinner. Serve them with sour cream and your favorite salsa and you’ll be good to go!

Spicy Pumpkin Mini Corn Dogs

Spicy Pumpkin Mini Corn DogsI know that upon reading the title of this post, some of you were probably a little skeptical (my husband included). I mean, pumpkin and corn dogs together in the same sentence? Will the madness ever end? I would like to preface this by saying that these corn dogs are not at all sweet. Whenever we think about pumpkin recipes in general, they tend to be desserts and so because of this we associate pumpkin with sweets, but pumpkin by itself, fresh pumpkin that is, actually leans more on the savory side. There’s a tinge of natural sweetness, much like some of the other squash within the same family, but that’s about it. I had this crazy idea to make a pumpkin cornbread a couple days ago, and when I was dreaming up the recipe, the idea to turn the batter into corn dogs hit me all of a sudden, and it just might be the greatest idea I’ve ever had…or the craziest, depends who you ask. I’ve played around with savory pumpkin recipes before like this vegetable pot pie from a few years back and let’s not forget this pumpkin pizza sauce! I might even say that savory pumpkin recipes are my new favorite, but I think that’s because I tend to gravitate more towards the savory rather than the sweet. Let’s be daring together and give this a try soon, you won’t regret it!
