Pistachio Buttermilk Old Fashioned DoughnutsYou can’t beat a classic buttermilk old fashioned doughnut, unless of course pistachios are involved and then it’s all over from there. Game set match. These Pistachio Buttermilk Old Fashioned Doughnuts are here to stay, and they just so happen to be the perfect weekend baking project. Of course, no baking is actually involved, because if I’m being 100% honest, fried doughnuts are a million times better than baked. I feel like if you’re going to indulge and eat a doughnut, then you might as well go all the way and have a proper fried doughnut. It’s really the only way, and those are words that I live by. Get on this train and give these doughnuts a try because I can’t stress enough just how amazing they are! Happy Friday, friends.

Baked Neapolitan Doughnuts

I know that technically summer is over and we shouldn’t be thinking of or making anything with fresh strawberries at this point of the year, but I just can’t help it. In my defense though, California has some of the best strawberries around and they’re in season all year round, so it makes it a bit easier to bake up some strawberry goodness. The other piece of great news is that even if strawberries aren’t in season wherever you are, you can easily make these doughnuts with frozen strawberries instead. So no excuses. Everyone should be making them soon. Now, speaking of doughnuts, let’s get to the main event. I’ve posted my fair share of doughnuts on this site, and each one is just as delicious as the last. These are Baked Neapolitan Doughnuts, and if I’m being honest, the main and only reason why I love Neapolitan so much (aside from the killer flavor combination) is that you don’t have to pick between one flavor or the other. It’s really the best of all three worlds. These are baked doughnuts that are half vanilla and half chocolate. The strawberry part comes in through the glaze and the crushed up dried strawberries on top. Give them a try this weekend and enjoy with family or friends, while you grasp that fleeting summer heat. It doesn’t get any better than this.

New York Cheesecake Doughnuts

New York cheesecake meets doughnut and there’s honestly nothing better than this moment right here, right now, and us discussing this incredible creation. I have to admit that the idea came to me last week when I saw a photo on America’s Test Kitchen’s Instagram account. The photo in question was for their cherry cheesecake cookies and as soon as I saw them I thought to myself, these would make amazing doughnuts. How can I make this happen? After a few tweaks and a lot of thinking, these doughnuts were born and there’s no turning back now (not that we’d want to). The great thing about these cheesecake doughnuts though, is that they’re 100% easier to make, cook up a lot faster than traditional cheesecake, and are completely versatile. Transform all of your favorite cheesecake recipes into doughnuts, you’ll be so glad you did. It’s the recipe of the summer. All you need are a couple glasses of rosé and you’re ready to go.

Baked Oatmeal Raisin Doughnuts + GIVEAWAY!

Sometimes I’m faced with the dilemma of having to choose between a doughnut or a cookie. Believe me, it’s one of life’s toughest decisions, and one that I wouldn’t wish upon anyone. Because I consider us good friends, and because I want to make things as easy on you as possible, I’ve decided to combine the two together so that you no longer have to make that difficult choice for yourself. Thanks to these Baked Oatmeal Raisin Doughnuts, you can now have a cookie in doughnut form; satisfying two cravings at once. Baked Everything Bagel Doughnuts

The first thing we should get out in the open is the giant elephant in the room. You know it’s there. I know it’s there. Yes these are doughnuts but they’re bagel doughnuts. They’re not sweet at all—like we’ve come to know with traditional doughnuts—and aren’t meant as a dessert or sweet treat, but rather they’re meant to be eaten like you would a savory bagel; for breakfast or brunch. If you’re a big fan of everything bagels with cream cheese, like I am, then these baked everything bagel doughnuts might just be your new favorite recipe to try the next time you’re having people over for brunch, or just to make during the week for your family before work and school. The second thing we should discuss is that they’re super easy to put together because you can make them by hand, without any fancy equipment. They’re a lot easier to make than actual homemade bagels, so that’s a plus in it of itself. No one has time to make traditional bagels what with the dough rising and the boiling and the baking. If you do have the time, you can check out these New York Bagels from a while back, but if you don’t have the time, well these baked bagel doughnuts are calling your name. You better answer.

PB&J Mini Doughnuts

I ate an obscene amount of peanut butter and jelly sandwiches as a kid. My mom would make them and pack them in my lunch almost every single day, along with cool ranch doritos. I may or may not have put the chips into my pb&j sandwiches. It’s a secret, but I’ll give you a hint, and it’s yes. It was a production and one that I looked forward to every day at lunch in the cafeteria. Now as an adult, I don’t eat as many peanut butter and jelly sandwiches as I would like to, but I still do get a craving every once in a while. When that happens, I like to eat pb&j inspired dishes, instead of the boring ol’ sandwich I ate all the time when I was younger. This Peanut Butter and Jelly Coffee Cake or PB&J Cupcakes are among some of my favorite desserts. This time around, I’ve decided to make PB&J Mini Doughnuts because we all know doughnuts are far superior to anything else, and because I’m always looking for an excuse to eat sweetened fried dough whenever possible. 

The operative and most important word in this recipe is not doughnuts, but rather mini. These doughnuts are made to be miniature for the sole purpose that you can eat as many as you’d like, without judgement. So I say that the only solution to this problem is that you make a big batch, even if it’s just you by yourself, and give this recipe a try. Mini means you can snack on them throughout the day, and feel like you haven’t made a dent. What are you waiting for? Don’t you want to feel nostalgic, like you’re a kid again eating a pb&j sandwich in school? What better way to do that than with fluffy homemade fried doughnuts?
