Eggs Benedict CasseroleWith Mother’s Day just around the corner I think it’s high time we talk about a recipe that our mothers will enjoy. Now, I’m in the mindset that every day should be Mother’s Day, and that we shouldn’t only put emphasis to the women who sacrificed and raised us with unconditional love, on this particular day. Rather, we should remember to thank them as much as possible and tell them we love them as often as we can. Even if we’re not fortunate enough to have them around anymore, well, let’s remember them always. So I guess what I’m trying to say is that this post is dedicated to all the women out there that have cared for and loved children, whether they physically gave birth to them or not. A mother is a strong woman who makes the world a better place by providing love to those in need. I could go on and on about how amazing my mother is and how she’s the best in the world, but I won’t because she knows this, I tell her all the time. I also won’t do it because she isn’t the only one out there. With that being said, in developing that perfect Mother’s Day recipe, I did take inspiration from my mother’s favorite brunch dish and that of course is Eggs Benedict. This Eggs Benedict Casserole, in partnership with my friends over at GO BOLD WITH BUTTER, is that ultimate breakfast and/or brunch dish that will have everyone thoroughly impressed; including your mother.

Chili Cheese Dog Hotdish

Chili Cheese Dog Hot DishMy family doesn’t know a single thing about football, nor do we really care about the Super Bowl, yet somehow year after year, we manage to come together on Super Bowl Sunday and pretend to watch the game. We’re all really just there for the food. I’ll make a few snacks to get us through the earlier part of the day, and you’d think that would be enough for all of us, but no of course not.  I still end up making dinner because all of those finger foods just make us hungrier. I’ve teamed up with my friends over at GO BOLD WITH BUTTER to bring you this ultimate comfort food casserole. Chili Cheese Dog Hotdish is like a very hearty chili made of ground beef and sliced hot dogs…yes you read that right, hot dogs. Then it’s topped with tater tots, lots of cheese, onions and scallions, much like you would a chili dog. It’s winter comfort meets game day feast in a bowl and you do not want to miss out.

Tamale Mac and Cheese

I’m a big fan of tamales, my favorite being the green chili chicken variety, and I’m also a really big fan of mac and cheese (don’t even get me started on that front). So this Tamale Mac and Cheese is the best of both worlds. Two of my favorite dishes colliding into one mega casserole because that’s what this blog is all about. Taking two recipes and mashing them together in unexpected ways. I wanted to create a new and exciting mac and cheese recipe for the site, and so I asked Julian what he thought I should make. So he out of the blue without missing a blue was like, “a tamale mac and cheese would be awesome!” Then we both sort of brainstormed this green chili chicken tamale mac and cheese. This dish features a bottom layer of masa, then a layer of green chili chicken sauce and then of course topped with a mountain of homemade mac and cheese, and a layer of crispy bread crumbs and more cheese. Then it’s baked until bubbly and I kid you not, it tastes JUST LIKE a green chili chicken tamale. It’s crazy and cozy and comforting and calling out your name. It might by slightly over the top but sometimes you deserve to treat yourself with a melty cheesy pasta-filled dish, especially during this time of year. It’s great for potlucks or family gatherings. So keep it up your sleeve until you’re ready to have your life changed or when you’re in need of an out-of-this-world recipe that will impress everyone.
