Breakfast Egg Rolls

You might already know that I have a thing for egg rolls and/or spring rolls. Basically anything that is fried until golden brown and crispy is my jam. I can’t resist a fried treat. Some of my favorite roll recipes on the site include, but are not limited to, Cuban Sandwich Egg Rolls, Loaded Baked Potato Spring Rolls, Ruben Sandwich Egg Rolls, and Beef Nacho Spring Rolls. It seems only natural that I add yet another great recipe to the growing list of egg and spring rolls to the site; this time around though with a breakfast twist. Egg rolls are getting the potato, bacon and egg treatment because who says you can’t have egg rolls for breakfast? I’m here to tell you that you can and you most definitely should. I’m a bad influence, I’m sorry. Now you have a valid excuse to devour these for breakfast because these are filled with hash browns, scrambled eggs, crispy bacon and lots of cheese. Everything we love first thing in the morning, right? They’re served with a spicy ketchup sauce (that is literally two ingredients) and are perfect for breakfast on the go, or great for a weekend brunch with friends and family. Mid-day snack? Yes. Late night treat? Even better.

Tex-Mex Avocado Toast

I’m really bad about eating breakfast, especially during the week. I know that it might sound like I’m throwing a line around, but I mean it when I say that eating breakfast gets away from me sometimes. I need to be better about forcing myself to eat something in the morning. Even if it’s something small. At times, if I can remember, I’ll have a breakfast bar or some cereal because it’s convenient and I can do it while I’m working. Not the best situation, but I do feel like it’s way better than eating nothing. Believe me though, if it was up to me I’d eat breakfast burritos every single day of my life and I’d most definitely be the happiest person on the planet. That isn’t possible however appealing as it may sound, so I’m always on the look out for quick and delicious recipes to make myself for breakfast. I’m a big fan of avocado toast, along with everyone else I’m sure, because it’s filling and super easy to make. It takes no time at all and doesn’t actually require me “cooking.” This Tex-Mex Avocado Toast takes the classic dish and tops it with all of our favorite taco toppings. It really doesn’t get much better than this, so let’s not worry too much about talking about it, let’s focus on actually making it so we can eat it as fast as humanely possible. The avocado toast just continues to please.

Breakfast BLTs

I visit my friend Joy in New Orleans, about once a month or so (not enough if you ask me), to chat and drink and eat and most importantly get some work done because we’re adults and that’s what adults do. Whenever I’m there, we always try to offset all of the work we have to get done by splurging a little on Friday. Which basically just means to eat all of the food and drink cocktails all day long. It’s a nice balance that we’ve perfected over the years. We do this by visiting the same restaurant, The Camellia Grill, in Uptown/Garden District. It’s a great place that has been there for forever, and the guys working are some of the nicest people you’ll ever meet. Seriously. There are no tables, just a long bar down the middle, which is first come first serve. The last time I was there, Joy ordered herself a BLT with a fried egg, and because she’s the coolest cat on the planet, I too decided to order a BLT with a fried egg. We ate it with a side of hash browns, orange juice, grapefruit juice and coffee, because we’re splurging. 

Although, it was one of the easiest things you could ever possibly order from any restaurant, for some reason it was the best thing I ever ate while in New Orleans. This probably has more to do with the company and the vibe of being in a local hangout spot, coupled with the fact that as we were sitting there eating our Breakfast BLTs at 10am, out of nowhere, a woman got up from her seat and sang “Summertime” to the entire restaurant. It was pure magic I tell ya. A memory that is not easily forgotten. Now whenever I eat a BLT, I instantly go back to that very moment. It’s funny how that happens, isn’t? I love that food has the power to do that. 

I thought I’d share this super easy recipe with you all so that you too can have a euphoric moment involving bacon, lettuce, tomato and bread. Sometimes I find that I can easily get lost in complex recipes and flavors with long posts and what not. So I think it’s important for me to step back every now and then, and throw in a simple uncomplicated stress free recipe for us to try. Plus did I mention there’s bacon involved? Yes, bacon.

Glazed Chocolate Chip Yeast Waffles

These Glazed Chocolate Chip Yeast Waffles are a cross between a breakfast dish and dessert. It can really go both ways and that’s the best part about this post/recipe. The waffles are crispy on the outside and soft on the inside, and studded with chocolate chips. Did I mention that they’re dipped in a vanilla glaze? They’re like fluffy waffle doughnuts, and I am in love. The greatest thing you can do for yourself this week is to whip up a batch of these glazed waffles as soon as possible. Breakfast, brunch, snack or dessert, you really can’t go wrong. You can make the batter the night before and keep it in the fridge until the next morning when you’re craving something sweet. Bust out that waffle iron and get cranking.

Country Breakfast Sandwiches

You know when you’re at a diner, and you start thinking to yourself, “Should I be indulgent and get the big ol’ country breakfast plate or be safe and just get like a bowl of fruit or a small stack of pancakes?” Yeah, that happens to me all the time. The sad news is that I almost never get the big country breakfast, and believe me, I’d love to. Sometimes you have to be a logical thinking person though, and consider all of the doughnuts and cookies and fries you’ve already eaten in the week, so you decide to be good. What makes country breakfast platters so great anyhow? Could it be the country fried steak slathered in gravy served with eggs and of course let’s not forget about those fluffy flaky buttermilk biscuits? There’s no way that a bowl of fruit could beat that. 

These sandwiches are in honor of all those times that we’ve all opted out for the fruit instead. All those times we’ve tearfully made the decision to be good. Sometimes we just need to be bad. So whenever you do have that sudden urge to indulge, I’ll always be here rooting and cheering you on. Today, I’m rooting you on with these Country Breakfast Sandwiches. It’s everything we love in that traditional diner plate, rolled into a nice small package. I’m not going to be crazy and say that these are healthy, because let’s face it, that’s impossible. But I will say that these have two things going for them that make them a little bit better, A). they’re homemade and B). the country fried steak is actually country fried turkey breakfast sausage. I practically feel healthier already.

The Classics: Blueberry Muffins

It’s time for another installment of The Classics on the blog. All this means is that it’s time for me to share another simple and delicious recipe with you that requires no effort at all to make. These are the recipes I think we should all have in our repertoire, ready to be pulled out from up our sleeves when the need arises. This week, I’m sharing The Classics: Blueberry Muffins. The best thing about blueberry muffins, or any muffin for that matter, is that they can be eaten for breakfast without any judgement from anyone. You’re basically eating cake first thing in the morning, and no one will ever stop you. Muffins are magical for that reason alone. That and because they’re super easy to make, which means you can eat them faster. That’s very important when you’re craving something sweet. 

You might’ve of seen on my Instagram by now that I’ve been doing some work for Food.com. Each month I’ve been reshooting some of their most popular recipes. Along with shooting a few special projects for them that I’ll be able to share with you in the coming months. It’s been a lot of fun and so I thought to commemorate this great partnership, I’d adapt their most sweetest blueberry muffins recipe and share it with you guys here. I hate giving something the title of “best…I’ve ever eaten” because I feel like if I say it too often it’ll lose it’s value fast. However, I will break my rule this time and say that these really are the BEST blueberry muffins I’ve ever had. I swapped out the milk for buttermilk (because I always use buttermilk for my cake batters to keep them from drying out), I added some fresh nutmeg for a little pizazz and topped the muffins with a simple crumb topping because I love muffins with a streusel topping. It reminds me of coffee cake but studded with blueberries wrapped up in muffin form. Make them this week and keep them on hand for breakfast or brunch. You’ll thank me later.
