The last slab pie I made on the blog, S’mores Slab Pie, was such a big hit that I decided I needed to try my hand on another variation. It just had to be done (but I’m most definitely not complaining about it). If there’s one thing I’ve learned through the years of blogging, it’s that people really love pie. Like take all my money and give me all your pie type of love. Do you know what people love more than pie though? A giant pie baked in a large baking sheet. I think it’s because of the perfect even ratio of crust and filling, but also because it feeds the neighborhood and really gives you the opportunity to eat a lot of pie. What’s so wrong with that? This mouth-watering Caramel Apple Slab Pie situation is brought to you in partnership with Go Bold With Butter because we all know that apple pie would not be possible without copious amounts of butter. They go hand in hand. If you’re looking for a great weekend baking project, I think you just found it. Either way there’s never been a more appropriate time to say, Cheers to the Weekend! Apple Pumpkin Pecan Pie

Let’s talk about the ULTIMATE Thanksgiving pie. I don’t know if any of you are like me and are sometimes plagued with doubt and uncertainty when it comes to pie. I never know what pies to make for Thanksgiving. I always make a pumpkin pie for sure. That’s a hands down, a given. Where I really struggle on making a decision is the second pie. I ask myself questions like, should I just make another pumpkin pie? Should I go classic Americana and do an apple pie? Should I turn to my imaginary Southern roots and make a pecan pie y’all?! I never know! Each year I’m pulling out my hair, asking everyone I know (and even random strangers at the grocery store) what kind of pie should I make this year?! I’m grabbing them by the collar and shaking them for an answer. When I come to, I realize I’ve just scared the life out of this helpful grocery store patron. Something has to be done. 

This year I promised myself I wouldn’t hop on that crazy emotional roller coaster again. Never again! What can I say? I take my Thanksgiving pies very seriously. Is that weird? Anyhow, so the only logical answer to my dilemma was to bring three classic pies together into one mega super pie. A pie to end all pies. This pie starts with a layer of spiced caramel apples topped with a layer of pumpkin pie and finished off with a pecan praline layer. It seriously doesn’t get any better than this. So this year as you’re mapping out your recipes for the big day, consider blowing everyone of your guest’s minds with this pie. They’ll go home and tell everyone about it, and you’ll be the greatest Thanksgiving Day Hero in history. So go on and be the Thanksgiving Day Hero I know you can be.

Apple Blueberry Turnovers

What’s the best part of autumn? Besides the cool weather, the crisp air, the mere fact that summer is over? Is it the rain? Close, but nope. The smell of cinnamon? Oooh good, but no, not quite. Apples. Yes, bushels and bushels of apples. So many apples I hardly know what to do with them. Usually during this time, I’m putting apples in everything. Making apple pie every other weekend. I dream about apples. I wake up with ideas in the middle of the night, scheming on how to cook them next or incorporate them into my diet. One can say that I’m addicted to this fruit, especially during their peak season, so much so that my family gets tired of eating so many of them in everything I make. Candy Apples, Apple Cinnamon Coffee Cake, Apple Crumbles, Apple Tarts, Apple Butter…you name it. To celebrate the start of my favorite season, I decided to make Apple Turnovers. I just happened to have blueberries on hand, thanks Trader Joe’s for having them on sale, so I thought, “Why not just add them? Sure, throw them in Jonathan. You’re a genius!” Yea I talk to myself all the time, usually complimenting my good ideas. Patting myself on the back. It’s a sight to see.

My friend, whom I mentioned in the previous post, has been wanting to start cooking, so I decided to develop a quick and easy recipe for her! Its a great fake out dessert, where we take a little help from the store with the puff pastry. It’s a perfect treat any beginner can make that’ll make them shine like a star! Let’s get started.
