Watermelon Mexican Mules

These are a great summer drink that takes the traditional Moscow Mule and reinvents it with the help of fresh watermelon and tequila.
Serves: 2 cocktails
  • ½ cup cubed fresh watermelon
  • 2 ounces simple syrup (or agave nectar)
  • 1 lime, juiced
  • 4 ounces tequila
  • ginger beer, to top off cocktail
  • lime wedges, for garnish
  • watermelon wedges, for garnish
  • fresh mint, for garnish
  • ice
  1. Fill two copper mugs or short cocktail glasses with ice. Set aside.
  2. Add the watermelon, simple syrup and lime juice to a cocktail shaker. Break down with a wooden muddler or spoon until it looks like pulp. Fill the shaker with ice and pour in the tequila. Cover tightly with lid and shake vigorously. Strain into the prepared cocktail glasses, dividing between the two.
  3. Top off each with ginger beer and garnish with watermelon wedge, lime slice, and mint. Serve immediately. Enjoy!
