Sheet Pan Egg in a Hole with Sausage and Breakfast PotatoesI’ve had my fair share of sheet pan recipes on the blog, but none have made me quite as excited as this Sheet Pan Egg in a Hole with Sausage and Breakfast Potatoes. This could be because I love breakfast, but it could also be because egg in a hole was a childhood favorite of mine. Sometimes, especially on the weekends, I really want a hearty breakfast because I typically don’t eat so heavy during the week, but the idea of dirtying so many pots and dishes really turns me off from cooking. This sheet pan recipe makes it so easy to get breakfast or brunch on the table without all of the work.  The best part is that it could also double as a quick and easy dinner recipe because there’s nothing I love more than breakfast for dinner. It reminds me of my childhood when my mom really wouldn’t feel like cooking and so she made us potatoes and scrambled eggs with bacon and we’d be so happy. To us, it was a treat to eat morning food at night, and to her it was great to whip up something quick. I hope you’ll give it a try this weekend. It’s also a great recipe for the upcoming holidays. Sheet Pan New England Dinner

Sheet Pan New England DinnerI’ve had a few baking sheet recipes on the blog now, and each one quickly becomes my favorite. From Mediterranean Chicken Thighs to Jambalaya to Lomo Saltado and even Fish and Chips, there’s literally something for everyone. My new current favorite obsession just happens to be this Sheet Pan New England Dinner. Delicious shrimp cakes with roasted potatoes and a corn succotash. I know that this can technically be considered a summer meal, but the use of shrimp I think makes it acceptable all year round. And I find that because it’s baked in the oven, it really is the perfect “I don’t want summer to end” meal. Or the “I can’t believe summer is over” meal. Anyway you look at it, it’s the perfect meal to make when you don’t want to spend hours in the kitchen or are just too tired from the work day. You’ll love it!

Sheet Pan Fish and Chips

Sheet Pan Fish and ChipsI was raised Catholic and so during Lent, we ate a lot of fish on Fridays in my house. To this day, I still have a craving for it, more so, during this particular time of year. Fish and Chips is one of those dishes I wish I could eat more regularly, but the idea of all the steps it takes to batter and fry the fish, and the double frying of the fries makes me second guess the entire notion. Luckily for us all though, this Sheet Pan Fish and Chips is here to save the day. It’s ready in about 45 minutes (40 if you work fast enough) and it all cooks on a single sheet pan; no large vats of oil required. Whether you make it on a Friday or anytime during the week/year, when you’re craving something fast and delicious, it’ll become your new go-to “Fish Fry.” And if you’re a big fan of sheet pan dinners, as much as I am, then be sure to check out all the rest I have here on the blog. Sheet Pan Turkey Caprese Meatballs

I, just like everyone else out there in the universe, am obsessed with sheet pan dinners. They’re so easy to make and require practically no cooking (from you) at all. Just dump it all onto a sturdy baking sheet and let the oven do all the work for you. It really doesn’t get any better than that, especially if you hate cooking or simply don’t have much time for it during the week. If you recall, I’m no stranger to a sheet pan supper on this here blog. It all started with this Mediterranean Chicken Thigh situation that you all really seemed love. Then we visited New Orleans with this Sheet Pan Jambalaya number. Let’s not forget about the sausages and peppers, because I certainly haven’t. Then I took us to Peru with a Sheet Pan Lomo Saltado that I’m still dreaming about. Today, I figured it was high time for another reincarnation. Sheet Pan Turkey Caprese Meatballs complete with blistered tomatoes and crispy rosemary potatoes. It’s a complete meal that you can have on the table in less than an hour.

Cheers to the Weekend: Roasted Sheet Pan Lomo Saltado

It’s time for another installment of my favorite ongoing series on the blog, Cheers to the Weekend! A) because it’s the weekend (finally) and B) because it’s been a while since the last one went up and that just won’t do. It’s also time for another much needed sheet pan dinner recipe. If you recall, some of the other sheet pan wonders have been this very first Mediterranean chicken thigh situation, this sausage and peppers number and let us not forget that yes, you most definitely can make Jambalaya on a baking sheet—and guess what, it’s phenomenal. This time around I’m taking my favorite Peruvian dish and giving it that ol’ sheet pan one-two transformation. I’ve been obsessed with Peruvian food ever since my oldest sister dated a Peruvian guy in high school and he introduced us to this great restaurant by his house. That guy is long gone (and I’m kinda happy about it since we have the same name and it was a little weird), but my love for Peruvian cuisine is still going strong. This roasted sheet pan lomo saltado takes a classic dish and gives it a modern twist. It’s like a stir-fry basically, but the best part of it is the french fries in it. I’m a fan for fries in everything and anything. This one takes the cake. I hope you give it a try soon because a sheet pan dinner is always a good idea.

Sheet Pan Roasted Sausage and Peppers

I’ve been addicted to super simple sheet pan dinners lately, mainly because I’m kind of lazy to cook something time-consuming and extravagant these days. The warmer it gets outside the less time I want to spend in the kitchen. I’m just not feeling it, ya know? In case you’ve fallen behind on the times though, let me give you a friendly reminder, these Mediterranean Roasted Chicken Thighs and Sheet Pan Roasted Jambalaya were the last two sheet pan dinners I shared on the blog, and you guys really seem to like them so I decided to add another rendition to the rotation. It’ll give us a chance to build up an arsenal of super easy-to-make dinner recipes. We all need them. 

This Sheet Pan Roasted Sausage and Peppers is beyond simple. I’m almost too embarrassed to post it because it kind of doesn’t require a recipe, but whenever I feel like this might be the case I talk myself out of it because I feel like maybe someone out there really does need this recipe?! I know my mom and sister are always asking me how to make this dish, so if nothing else, it’ll help them out! I hope it helps you out as well, when you don’t know what to make for dinner and want something stress-free, this is the way to go. Let’s all Cheers to the Weekend!
