Snickers Marshmallow Treats. What can I say about these treats to end all treats? They don’t have actual pieces of Snickers in them or anything because that’s not the point of these, although that would’ve taken them to the next level if we’re being honest. Instead, they’re meant to taste just like a Snickers bar because we both know that sometimes plain marshmallow treats just aren’t enough. So a brown butter marshmallow treat base gets a thick caramel layer studded with peanuts and then topped off with melted chocolate. Go ahead and try to tell me that dreams don’t come true. I’ll call you a liar because these prove otherwise. These are what dreams are made of. The best of both worlds. Candy bar meets rice cereal treats.

Let’s begin by melting and browning the butter. Place 4 tablespoons (half a stick) of butter in a large nonstick pot or dutch oven over medium-low heat. Cook slowly, stirring often, until the butter has melted and brown bits have formed at the bottom of the pot and the splattering has subsided. Stir in the marshmallows and cook until they’ve melted through.

**Note: Make sure to continue to stir constantly while melting the marshmallows as you don’t want them to stick to the bottom of the pot.**

Remove the pot from the stove and add in the rice cereal. Stir with a rubber spatula until well combined. Add 1 1/2 cups mini marshmallows and fold in gently.

Transfer the mixture to a 9 by 13-inch rectangular baking pan, lined with parchment paper, and sprayed with a little bit of cooking spray. Press down with wet hands into an even layer. 

**Tip: Make sure that the parchment paper hangs off both sides of the baking pan so that it makes it easier to remove the bars later on once they’ve cooled. That’ll make slicing and serving a lot easier!**

Meanwhile, in a medium saucepan combine the condensed milk, butter, brown sugar, and milk. Melt over medium heat, stirring often, and then bring to a boil. Cook for about 5 minutes, stirring nonstop. This will prevent the caramel to stick to the bottom of the pot. Remove from the heat and add in the salt, vanilla, and peanuts. Stir until well combined.

Pour the caramel over the marshmallow treat layer and then spread out evenly onto an evenly layer. It’s important to chill this in the fridge for about 20 to 30 minutes. The caramel needs to set for a while before proceeding to the next step. 

**Tip: If you want to speed things up you can chill the bars in the freezer for half the time.**

Melt the chocolate over a double boiler and then remove the bowl of chocolate from the simmer pot. Stir in the oil until glossy and well incorporated. 

**Note: Adding the oil in the chocolate keeps the chocolate from getting too hard when you go to cut and eat the bars. You can also use coconut oil instead if you prefer.**

Pour the melted chocolate over the caramel peanut layer and spread out evenly with an offset spatula. Place in the fridge and let set for about 15 to 20 minutes. The chocolate should be firm when you gently touch it. If you want to speed up the process, you can place it in the freezer as well.

Lift the marshmallow treats from the pan using the parchment paper overhang on either side, and then cut into 24 or 36 squares depending on how small you’d like them. Make sure to use a very sharp knife to make it easier to cut. They should be cut cold as it’ll make cleaner cuts and even pieces. A serrated bread knife will work great as well!

You can serve them immediately or keep them in the fridge until ready to eat. I like eating them cold, straight from the fridge, but if you’d like, you can let them come to room temperature about 10 to 15 minutes before serving. 

**Note: I don’t like to keep these out at room temperature for too long as the chocolate and caramel will get too soft. They’ll keep in the fridge for up to 4 days. But good luck keeping them in there for that long. They won’t last.**

If you’re allergic to peanuts, try it with cashews, walnuts or almonds instead! Or if you’re allergic to all nuts, or just don’t like them in your desserts, then you can totally leave them out. Make sure to use Rice Krispies cereal for these as they really do make a difference. This isn’t an ad for them or a sponsorship or anything, I just know from experience that the real stuff works much better. Sometimes they’re a bit more expensive, but it’s worth it.

Snickers Marshmallow Treats

Brown butter marshmallow treats with a layer of caramel and peanuts and a layer of chocolate. They're made to taste just like a snickers bar!

Prep Time 2 hours 15 minutes
Cook Time 15 minutes
Total Time 2 hours 30 minutes

Ingredients

Rice Cereal Treats

  • 4 tablespoons unsalted butter
  • 1 10-ounce bag mini marshmallows, plus 11/2 cups
  • 6 cups rice cereal

Caramel Layer

  • 1 14-ounce can sweetened condensed milk
  • 1 cup packed light brown sugar
  • 1/2 cup 1 stick unsalted butter
  • 1/4 cup whole milk
  • pinch of salt
  • 1 teaspoon vanilla extract
  • 2 cups salted peanuts

Chocolate layer

  • 2 cups semi-sweet or dark chocolate chips
  • 1 tablespoon vegetable or canola oil

Instructions

  • Line a 9 by 13-inch rectangular baking pan with parchment paper, allowing some to hang off the sides to make it easier to grab, and grease with cooking spray.
  • In large pot or dutch oven, set over medium heat, melt the butter and cook until brown bits form at the bottom. Keep an eye on it and make sure that it doesn't burn. Once the splattering subsides and the butter has browned evenly, add the mini marshmallows (reserving the 1 1/2 cups for later). Stir until melted through, about 3 to 4 minutes. Remove from heat and add the rice cereal. Stir until well combined. Add the reserved mini marshmallows and fold in. Transfer the marshmallow cereal mixture to the prepared baking pan and spread out into an even layer. Using wet hands, press down on the mixture to compact it. Set aside.
  • In a medium saucepan, combine the condensed milk, brown sugar, butter and milk. Set over medium-high heat and cook until melted through. Bring to a boil, and continue to stir nonstop and cook for about 5 minutes. Remove from heat and stir in the vanilla extract and peanuts. Pour the mixture over the rice cereal layer and spread out evenly with a spatula. Place in the fridge or freezer to let set, about 30 minutes.
  • Meanwhile, fill a medium saucepan halfway with water and bring to simmer. Place a bowl over the top, making sure the water doesn't touch the bottom of the bowl. Add the chocolate and stir until melted through. Remove from the double boiler and stir in the oil. Pour the melted chocolate over the caramel peanut layer and spread out evenly with an offset spatula. Return to the fridge or freezer to allow the chocolate to set.
  • Remove the bars from the pan and cut into 24 pieces. Leftovers can be kept in the fridge for up to 4 days. Enjoy!

One of the best dishes I have had were the kimchi fries at Crystal Lake Cafe in upstate NY (which you recreated and LOOK AMAZING) 🙂 Chicken and Beef Schwarma Platter outside of DC called Raoche Cafe. Burritos from Pedro and Vinnys (also outside of DC). Fried eggplant at Zaytinya in DC … basically anytime you come to DC I could rattle off a list of places inside and outside the city 🙂

    My most favorite meal is from Wilber’s BBQ in North Carolina! They have the best pork BBQ, potato salad and BBQ potatoes. Also the brunswick stew is amazing! My favorite thing here to eat would have to be the hushpuppies with chicken gravy! HOLY COW! It is a must! I have often made a meal just on the hushpuppies and chicken gravy! It is funny right now. My daughter just found out she is pregnant and all she has been wanting is Wilber’s. I think we go about twice a day! LOL!!! Thank goodness for BBQ potatoes, hushpuppies and chicken gravy!!!!

We don’t dine out very often, partly because we tend to be disappointed (we make far better food at home, thanks to recipes from blogs like yours) and partly because unique, non-chain spots are only now starting to thrive in our area. Most of my OMG culinary moments take place on vacation, BUT one gem that we have in Davenport, IA isn’t really a restaurant, but rather a traveling crepe master known as The Crepe Guy. You can find him every Saturday at our Farmer’s Market downtown during the season and then various spots during the week, throughout our community. He makes it easy for you by offering two choices – one sweet and one savory, using as many locally sourced ingredients as possible. To pick a favorite would be impossible, so I would suggest, if you ever find yourself in our area and have the chance, just have one of each that day…and enjoy.

  4. We also do not dine out often because of disappointments with the food and service. However, we had a wonderful lunch at El Fez in Philadelphia, Pa. I had the grilled Steak tacos, YUMMY. The beef was tender and delicious. We also had very good salsa and chips. It was a good experience for my husband, son and new daughter-in-law. We live in Jersey and are finding Philly to be a treasure trove of good eats.

  6. One of my favorite things to do is eat like the locals do wherever I travel. We recently visited friends in Woodbridge, VA just outside of DC. On our last night, after overstaying our welcome, we took them out to dinner and asked for something we can’t get in California. They took us to Tim’s Rivershore in Dumfries, VA. I actually thought they were taking us on a drive to get rid of us. It started out normal, until we hit a dirt and gravel road, crossed some railroad tracks, drove along them with the Potomac on the other side. It wasn’t until a clearing in the trees showed this little shack of a restaurant with a huge deck, outdoor bar and a boat dock that we knew we were finally there. We sat on the deck overlooking the Potomac. Their specialty is seafood, blue crabs to be precise. We ordered our food and enjoyed it family style. Trays of spiced shrimp that are boiled and covered in Old Bay and other spices, crab cakes, steamed oysters, hot-hushpuppies and two heaping trays of Blue Crabs with more Old Bay. They ask you what size crabs you want, always go with the big ones, you will not be disappointed. We sat and ate and drank and ate and drank until we thought we would burst. They line the table with paper, set down school cafeteria trays of crabs and shrimp, and pass you a mallet, a knife and a bib. This was fun to participate in making a mess and digging in to dinner. It was one of those meals you can never stop thinking about and only want to experience again. Makes my mouth water just thinking about it. BRB, I’m going to go check airfares. . . .

  7. One of the best meals I’ve ever had was at V Street in Philadelphia, with my two best friends. We basically got one of everything on the tapas-style menu, which is entirely vegan. None of us are vegan, and one of us is a big fan of eating meat, but everything was so delicious and perfect, that it didn’t matter.

  8. We like finding little out of the way places. In tiny Klickitat, WA near the Columbia River Gorge is a restaurant/bar that gives the impression of being a dive but has the best steaks! They also have some great cheesecake. It is called Huntington’s. Across the river in Hood River, OR, you can’t beat Double Mountain Brewery for a really great pizza.

    Hubby and I recently traveled to New Orleans and ate everything!! You can’t miss in New Orleans, and I know your friend JoytheBaker is there so she may have a far better idea than I have. However, we went to the infamous Mother’s to try their Ferdi’s special po’ boy, but honestly the crawfish etouffe was AMAZING. To top it off, I had a brownie there that I’m still dreaming about. I’ve tried without any success to locate the brownie recipe on the internet, so if you’re up for a challenge try and recreate their brownie for me and I’d be forever in your debt!!!

  11. A local restaurant at the beach with Fried Clams as big as your fingers! And tender! And sweet. OMG – And another restaurant with calamari. And let’s not forget the BBQ shack that has the best pulled pork I have ever eaten.

    I definitely try to eat things I wouldn’t make at home when I go out. Especially if it is the specialty of the restaurant

  12. my best meal in recent memory was in dublin, ireland, at a place called taste at rustic. they serve the meat with a scorching hot stone so you can cook it precisely to your liking! the drinks, sides, and desserts were amazing too. highly recommended!

I will never ever forget the meal i had in a quaint (and only) restaurant in the small village of radicondoli in tuscany…it was just after sunset, on a hilltop, overlooking the beautiful region..and the meal itself was divine seafood..wild boar..best house wine..followed by the most divine hand churned gelato, tiramisu and limoncello! everything from the atmosphere, weather, food and company was superlative! it was nearly 6 years ago and i remember like it was yesterday!

    I can’t dine out due to food allergies but I do have one meal that I can tolerate, free from my allergens, and that is Captain D’s Baked Talapia on rice with broccoli. They have restaurants in WV and SC, that I know of. All of their seafood is delicious. I use to partake of their other dishes and my family enjoys them.

    Oh that is so hard – we’ve had so many great meals!! I was just telling a friend about a superb lunch we had at Jane in NYC last fall. Caeser Salad and toasted ricotta gnocci. Oh my!!! It was so good i’m tempted to book a flight!!

    I’ve enjoyed many delicious meals in restaurants, but my favorite meal to order I usually get to go. Ta Ra Rin in Eugene, OR has the best (Chicken) Pad Thai and Pad Se Ew (I order mine with pork–no cilantro). Off the Waffle (also in Eugene) has wonderful Belgium Liege Waffles (and great coffee, too!) I would pay good money if I could order your Snickers treats in a restaurant. They look so good and the recipe sounds delicious! I’ll try making them soon (just bought Rice Krispies last night)

    Prime 44 West at The Greenbrier. I had the Wagyu filet cooked (or not cooked) blue plus lobster mashed potatoes, and Italian cream cake. The food was fabulous and the staff is outstanding!

  22. My favorite meal has been the Southern Fried Chicken (with Pimiento Cheese Hush Puppy Appetizer) from Maya in Charlottesville, VA! Everything in Charlottesville is wonderful, really – an amazing place to go to college 🙂

  23. Well, if you want a change from the ordinary fast food places for fried and or baked chicken, let me introduce you to our local spot on New York Avenue in Huntington Station New York. It is called Pollo Campero and thier food is delicious. Nicely seasoned and cooked well. There is no caked up flour under the skin or gooey yellow fat either! Now that is truly finger licking good! Also, in addition to the normal fries if you like , there is an alternate fried Yuka sticks that are scrumptious especially with the Campero dipping sauce. You have got to check it out if you are ever on Long Island!

    My absolute favorite was a muscles and clams dish in a flavorful light curry sauce at The Silverwater in Port Townsend, WA. I highly recommend that restaurant if you make it up to the beautiful PNW 🙂

  26. One of my favorite meals (too hard to pick one!) is a cheese omelet smothered in crawfish etouffee with a side of cheese grits. There’s also zydeco dancing on Sunday mornings with a live band, at Cafe des Amis in Breaux Bridge LA.

  27. My favorite meal has to be birria (made from goat not beef) from this place in Ensenada, Baja California Mexico. I have family there and every time we go to visit we go eat birria for breakfast. I love having tacos de birria vs the caldo, and the place that we go to has someone that makes handmade tortillas so it just makes the experience even better.

  28. my favorite meal is anything at Apollo Grill in Bethlehem, PA. I usually order a selection of appetizers…they never fail to impress!!! some of my favorites… lobster ravioli with sweet & spicy honey chipotle sauce… lump crab & avocado cocktail sautéed in tequila lime butter… or my favorite salad, with arugula, goat cheese, mandarin oranges, walnuts, roasted red beets, and honey vanilla balsamic vinaigrette. UGH favorite restaurant ever

  29. My favorite restaurant that I’ve ate at was in Oklahoma City, OK. Kitchen No. 324 prepares local foods and also has a full bakery and coffee bar. I got their “Fancy Grilled Cheese” with Pepperjack, Gruyere, and Peach Poblano Preserves. I also got roasted cauliflower on the side with beer cheese fondue. Their most famous dish would be their Fried Chicken Pot Pie. They literally stick a piece of fried chicken right in the middle of it!

    Favorite restaurant experience, though? Definitely a combination of two meals at Bar del Corso in Seattle. We used to live down the street and the combination of our first meal there and a really excellent dinner with friends makes it my favorite. And I generally loathe Italian restaurants, so that’s saying something. Our first night there, we sat at the bar, sipped thoughtful cocktails, and noshed on house made sausages and roasted romanesco in romesco sauce. I had an amarena cherry for the first time and maybe I’d had a bit too much wine at that point, but it rocked my world. Our dinner with friends involved a shared bottle of lightly effervescent red that was NOT lambrusco and I’ve been searching for it ever since. I had a salad that was nothing more than stunning August tomatoes, Persian cucumber, buffalo mozzarella, smoked salt & olive oil and it was the purest thing I’ve ever eaten. Anywho, add to your list!

  31. We went to the Bent Rail here in Indy today for the first time with the Indy trans/queer community. It’s a brewery with a small but fantastic kitchen in a large family friendly warehouse space with all the bar games and a stage. I had the bahn mi sandwich: Five spice pork belly, pork liver pate, garlic aioli, pickled daikon|carrot, cilantro, & jalapeño. First time having any kind of pate, it was fabulous even though I’ve never liked liver before.

  32. We visited a historic tavern in Bardstown, Kentucky that was wonderful. It wasn’t gourmet food, just good country type foods. Fried green tomatoes, chicken and dumplings, homemade biscuits and more were all tasty and filling. Too filling!

    I visited Chicago for a summer and I’m still dreaming about a dinner I had at The Purple Pig. They had this amazing squid that was stuffed with prosciutto and breadcrumbs and a pork shoulder that was braised in milk. It’s tapas style so we ordered several dishes and all of them were amazingly creative and delicious! I think their menu changes so those specific items might not be there anymore, but whatever you order will be perfect. If you have room for dessert after, you have to order the Sicilian Iris: fried brioche filled with ricotta and chocolate chips!

    I just came back from Maine and I had the best lobster roll ever at Red’s Eats in Wiscasset. It is a good thing that I only live a few hours away because I am ready to go back and get another one.

    These look great! I’m one of those ones allergic to peanuts so i’d probably try it with cashews. My favorite meal is probably the ramen from Kru in Sacramento CA.

  36. Hi JonJon!! Thank you for my awesome ⚜New Orleans Saints⚜Cup souvenir!!!! Hahahaha Im super duper excited!!! Lol ??? Say what???!!!!! Lol I LOVE IT!!!? Sorry guys just had to get it out!!! Lol NOLA!!! ? Back to my favorite meal well… My favorite place to go is Crab Boil ? in Glendale they have the best shrimp recipe Louisiana style its better than San Pedro, Kickin Cajun & Drunkin Crab. But i love them all. However its a tie between Boiling Crab I can’t chose between the two because they both have their own unique sauce to die for and Cajun fries!!? My other favorite dish is from Jumpin Java in Studio City. Its a must they have the best potatoes Louisiana style! The best!! Must go try with Julian! I just go for those potatoes wink wink! Maybe you can teach us how to make our own with Idaho potatoes wink wink!? And last but not least those potatoe meat balls and black bean bananas from Portos! ? Ok im hungry now! Lol

  37. I forgot to mention I will never forget that freshly baked Lava Cake with vanilla ice cream from Charter House Restaurant in Santa Monica!! Very romantic and the perfect dessert to share!!??

  38. We love the San Dune Pub in Manzanita, OR for grilled fish tacos! So, so good.
